Prepare 4 chicken quarters
Take 2 knobs ginger; sliced

Cut up 1 bunch of green onions into 3” pieces. Slice your ginger.
Pat dry and season your chicken w salt on both sides. Sprinkle some white pepper if you fancy. Feel free to use different cuts of chicken too.
Into the Instant Pot they go! Place your chicken on top of a trivet. Distribute your green onions and ginger between the chicken. Add 1 cup of water.
Cook on high for 15mins.
Meanwhile! Mince the other bunch of green onions and add to a heat-safe bowl. Grate in 1 knob of ginger + 1/2 a tsp of salt. Pour in 2 tbsp of hot oil to slightly cook the mixture. This is Sauce 1.
